Hasty-Tasty Rice Pudding

Ingredients

2 cups of cooked (leftover, perhaps) long-grain white or basmati rice

2 cups Lehigh®- rBST-free Whole Milk

Splash of vanilla

1/4 cup maple syrup or honey

Cinnamon to taste

Nutmeg to taste (if your baby likes it)

Raisins (if you have them on hand; fine without)


Directions

1. Combine rice and milk in a large pot.

2. Over medium heat, bring to a boil, then quickly lower to a gentle simmer.

3. Add maple syrup, cinnamon, and nutmeg. Stir well. Simmer until liquid is almost completely absorbed, about 30 min., stirring frequently to avoid sticking or burning.

4. Stir in raisins, if desired. Serve warm or chilled.
